As the temperatures start to decline in the winter months, so do the number of people who use their grills. Still, there are the loyal few who brave the freezing cold to grill up a succulent steak or juicy burgers. For those of you who have yet to grill in the winter or just want some tips on grilling in the winter time, we’ve covered all the bases for you.

Okay, before I even start you can’t use your outdoor grill inside, even in your garage. Charcoal and gas grills produce large amounts of carbon monoxide and even small amounts can kill you. I know this might seem obvious to you, but every year a dozen people or more get killed using an outdoor grill inside. Indoor grilling must be done on a grill designed for indoor grilling.

Ingredients:
- 4-8oz Certified Angus Beef filet mignon
- 4 tablespoons olive oil
- 1 teaspoon marjoram
- 2 fine chopped cloves of garlic
- 1 teaspoon rosemary
- 1 teaspoon thyme
- 1/2 teaspoon crushed sea salt
- 1/2 teaspoon fresh crushed black pepper
Directions
Preheat oven to 400° F. If necessary, tie the roast with butchers twine in several places to make it an even thickness from end to end. Season with salt and pepper. Heat a medium ovenproof skillet over medium-high heat. Add the oil and swirl to coat the pan. Add the beef and sear until browned, about 3 minutes on all sides.
Mix together the mustard, horseradish, garlic and thyme. Rub the mixture all over the meat. Return it to the pan and place in the oven. Roast until it reaches an internal temperature of 130° for medium-rare, about 25 minutes. Place the roast on a cutting surface and tent loosely with foil. Let rest for 10 minutes. Slice the beef into desired portions, not more than 1/2-inch thick. Serve immediately with or without a dollop of horseradish sauce on the side.
