It doesn't take a master griller to know that when you throw a cut of steak, it's going to get cooked. However, it does take a master griller to understand how to make that perfect cut of steak. Someone who truly understands all the variables that come into play from the moment you unpackaged that steak until the savory flavor hits your mouth. These master grillers understand the heart of grilling is in the fire and controlling the fire to sear the cut is what flavors the food. We understand everyone isn't a master griller, but that doesn't mean you can't become one. Here are some helpful recommendations that can turn you from an amateur griller to an expert, and perhaps some day a master.
It is very important to preheat your grill with the lid closed for 10 to 15 minutes. This prepares the cooking grate and the heat loosens any bits of food, making it easier to clean. You want to keep your grate clean to prevent your food from sticking. There is no reason however to preheat or even cook on your grill using lighter fluid, obviously gas grillers don't need to worry about this. Lighter fluid is a petroleum product that keeps chemical fumes under your food as you are grilling.
This may not sound like a big deal, but keeping the lid closed as much as possible is vital to the grilling process. It keeps the grates hot enough to sear the food while speeding up the cooking time and preventing the food from drying out. It also prevents flare-ups by preventing oxygen from entering. Flare-ups are needed to sear the food being cooked, but too many can cause the steak to get burnt.
