Lobster Tail Preparation and Cooking
Lobster was once known as being a type of meat for poverty-stricken, penniless farmers. Since then the reputation of lobster has grown increasingly and is now known to be a gourmet meal in most fine-dining restaurants and a luxury for many people. Though some people prefer the taste of the meaty claws, the lobster tail is an appetizing part of this ocean dwelling creature. A mouth-watering meal of tasty lobster tail might seem to your guests as a gourmet spread but lobster tails are actually easy to prepare. A few garnishing herbs and an elegant side dish is a sure way to impress any dinner guest!
Lobster tails, unless bought fresh, are suggested to be defrosted for tenderization. If cooked frozen, they will not be as tender. To thaw, place the lobster tails in the refrigerator for at least 10 hours. Thawing in the microwave is an option as well but not recommended. If defrosting using the microwave, be sure to watch the lobster tails closely so they do not start to cook. Removing the meat from the shell is the next step to preparing lobster tails. After the tails are thawed, carefully cut down the back of the shell, split, and open it up to reveal the meat. Carefully lift the meat from the shell and remove the vein. The fanned part of the shell can be saved for decoration if you choose to do so.
Boiling Lobster Tails
In a large pot, add one teaspoon salt for every quart of water added. Bring water to a boil and add the lobster tails. Add the lobster tails to the boiling water and cook for approximately 1 minute per thawed ounce. If you are cooking a large quantity of lobster tails, be sure to add a minute or two to the total cooking time. For example, 16 ounces of tails need to boil for approximately 16 minutes.
Oven Roasted Lobster Tails
There are two options when cooking lobster tails in the oven. They can either be baked or broiled. To cook, set the oven to 400 degrees. Generously brush the tails with butter and bake for approximately 10-12 minutes or until done. If you choose to broil the lobster tails, place the tails at least 3 to 4 inches from the heat and broil for 3-5 minutes. Be sure to watch the tails closely so the tops do not burn.
Grilling Lobster Tails
Grilling lobster tails is a great way to bring out the natural flavors and makes for easy clean up! Before grilling, lightly brush the grate with oil to keep the tails from sticking. Preheat the grill to medium heat and brush the lobster tails generously with butter. Place tails on grill and watch them carefully as to not burn. Grill over indirect heat and be sure they are not placed directly over any flames. Grill each side for at least 3 to 5 minutes. If overcooked, the lobster tails will have a rubbery texture and lose their natural flavors. The lobster is cooked when it is no longer transparent.
