Perfect Pork Chops
If you want the best tasting pork chops, they need to be cooked on the grill with an excellent marinade. An overcooked pork chop is dry and not very tasty, but if cooked to perfection it can be tender, moist, and have lots of flavor.
Some people only like to buy pork tenderloin because it is tenderer, but you can save some money if you buy some pork chops and cook them right. It doesn't matter what cut of pork you are cooking, the secret to getting it just right is figuring out the exact point when the meat is cooked. Pork is supposed to be cooked through and never overcooked. To ensure these results you should take the pork off the grill a minute before they are done. It will still cook after you have removed it; all you have to do is set it on a platter and cover it with foil for about five minutes.
It may take a few tries to get your pork just right. You need to really look at the color, smell, and density to see if it is done or you can buy a meat thermometer. The thermometer should be inserted at the thickest part of the meat and if the meat has bones it should not be touching any of them. Take your pork of the grill when the temperature reaches 145 degrees.
When you cook pork you don't need to sear the meat, all you have to do is brush a good oil-based marinade over the pork. It is a good idea to make a sauce to put on the pork when it finishes cooking; this will keep it extra moist.
*Extra hint: pork loin chops are the tenderest of the chops, so grill those when you want to impress others with your cooking skills.
